But we like Inci for non-culinary reasons. This old school Beyoglu pastry shop has been spooning out cream puffs covered in chocolate goop for 70 years with a respect for tradition and a refreshing contempt for the latest trends in interior design. For better or worse, it is an institution. Continue…

Antebi: Straight Outta Antep
8 responses - Posted 06.04.10
On Saturday afternoon, in the southeastern Turkish city of Gaziantep, our baklava was neatly wrapped with plastic and then paper, tagged “Antebi, Istanbul” in black marker and escorted to the bus station by either Levent or Bülent of Zeki İnal Baklavacısı. While we slept that night, our baklava passed through ...continue
Up in Smoke: Homegrown Turkish Delights

Yesterday, a New York Times article, titled “Marijuana Fuels a New Kitchen Culture,” reported that some “chefs are unabashedly open about marijuana’s role in their creative and recreational lives and its effect on their restaurants.” With dishes like poutine of foie grois, cereal milk flavored soft-serve ice cream and deep-fried ...continue
Kısmet Muhallebicisi: Funky Chicken

Ali Bey, the owner of a cubby-sized restaurant in Küçük Pazarı called Kısmet, sounded a bit like Bubba Gump listing the items on his menu: “Weve got chicken soup, fried chicken gizzards, shredded chicken breast, dark chicken meat too, chicken and rice, chicken with onions and peppers, and chicken breast ...continue
48 Hours in Istanbul: An Eater’s Guide

(Editor's Note: The New York Times' travel section recently ran a "36 Hours in Istanbul" feature that was low on good eating suggestions. Prompted by the Times piece, today's post is a food-centric "48 Hours in Istanbul" guide we prepared a few months ago for a local magazine.) Day One: Turkey’s ...continue
Sakarya Tatlıcısı: Just Dessert

The arrival of fall usually finds us heading instinctively, like a salmon swimming towards its ancestral headwaters, to Beyoğlu’s Balık Pazarı, the neighborhood’s old fish market. Autumn is quince season in Turkey and that means the appearance – for a limited time only – of one of our favorite desserts, ...continue
Özkonak: The Real Pudding Shop

Regulars at Özkonak, a well-loved fixture in Cihangir’s ever-changing restaurant scene, must cluck in disapproval at the sight of a new generation of customers who walk right past the pudding display at the front and head for the steam table and its selection of prepared savory dishes in back. Though ...continue
Karaköy Güllüoğlu: Still Flaky After All These Years

Baklava, the flaky, phyllo-dough based pastry, has long ago stopped being a Middle Eastern regional specialty. In America, for example, it is now a staple of dessert menus at diners and falafel stands across the country. But these places miss the point: baklava is actually not a dessert, but rather ...continue
Kaymak: The Heavenly Cream
24 responses - Posted 04.01.09
In our imagination, kaymak - the delicious Turkish version of clotted cream - is the only food served in heaven, where angels in white robes dish out plate after plate of the cloudlike stuff to the dearly departed, who no longer have to worry about cholesterol counts and visits to ...continue
